(Serves 4-6)6 hard boiled eggs
(here is a good piece on how to make perfect boiled eggs)
2-3 T mayo
dash red wine vinegar
1 1/2 tsp. Dijon mustard
2 tsp. very finely minced red onion
2 tsp. finely chopped jalapeno pepper (I substituted a pinch of ground Chipotle peppers)
1 tsp. curry powder (I used Penzeys sweet curry)
salt, pepper to taste
(Karina recommends white pepper)
sweet paprika, for garnishing (I used Penzeys)
chopped chives or cilantro, for garnishing
Carefully slice eggs in half, lengthwise. Scoop out the yolks into a small mixing bowl. Mash yolks with a fork, then add enough mayo to moisten and combine. Add dash of vinegar and the mustard, combine well. Add diced onion, chipotle powder, and curry, mixing until smooth and creamy. (Add a bit more mayo if the mixture seems too stiff.) Taste for seasoning and add salt and pepper to taste. Spoon the filling carefully into egg halves and place on a serving platter. Sprinkle eggs with paprika, and garnish with chives or cilantro if desired.
