- 2 tsp peanut oil
- 1/4 tsp red-pepper flakes
- 2 thin-cut, boneless, skinless chicken breasts, cut into bite-size pieces or strips
- 1/3 cup asparagus tips
- 1/3 cup thinly sliced carrots
- 1/4 medium onion, cut into bite-size pieces or strips
- 1/3 cup frozen snow peas
- 2 tbsp sliced almonds
- 2 tsp reduced-sodium soy sauce
Directions

Combine the peanut oil and red-pepper flakes in a medium-hot skillet. Add the chicken and cook for 2 to 3 minutes, stirring frequently. Add the remaining ingredients and cook for another 2 to 3 minutes, still stirring often. Serve over brown rice.
