Instructions:
1/4 cup extra virgin olive oil
1 tsp. finely shredded lime peel
1 Tbsp. lime juice
1 Tbsp. balsamic vinegar
2 tsp. honey
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
2 to 3 medium heirloom tomatoes, cut into wedges
1 cup whole cherry or grape tomatoes
3 oz. fresh mozzarella cheese, cut into cubes
10 whole fresh basil leaves
Directions:
1. In a screw-top jar combine the olive oil, lime peel, lime juice, balsamic vinegar, honey, salt, and pepper. Cover and shake well.
2. Arrange tomatoes, fresh mozzarella, and basil leaves on a platter. Drizzle with dressing. Makes 4 to 6 servings.
